Peruvian Chicken with Aji & Pickled Red Onions

3 tablespoons extra virgin olive oil

1/4 cup lime juice, from 2 limes

4 large garlic cloves, roughly chopped

1 tablespoon kosher salt

2 teaspoons paprika

1 teaspoon black pepper

1 tablespoon cumin

1 teaspoon dried oregano

2 teaspoons RxSugar®

Directions :

Mix all ingredients and marinate overnight or at least 1 hour.

Smoke for 35-45 mins at 250 & kiss with the grill to get some char if necessary or can be cooked in oven 350 degrees 30-45 mins or fry

 

AJI

2 jalapeño chili peppers

1 cup packed fresh cilantro leaves

2 cloves garlic, roughly chopped

Tablespoon mayo

2 tablespoons sour cream

1 tablespoon fresh lime juice, from one lime

1/2 teaspoon salt

1/8 teaspoon freshly ground black pepper

2 tablespoons extra virgin olive oil

1 teaspoon RxSugar®

Directions:

Blend until smooth

 

PICKED RED ONIONS

1 red onion sliced

2-3 limes and juiced

2 teaspoons RxSugar®

2 teaspoons red wine vinegar 

Salt & pepper to taste

Directions:

Mix all ingredients and place in airtight container and let refrigerate for at least 30 minutes.

Serve on top of chicken and with Aji
